Fast Korean Fried Chicken With Sticky Gochujang Glaze

The first time I had proper Korean fried chicken it wrecked every other fried chicken for me. That lacquered, glass-thin crust that somehow stays crunchy under a sticky-sweet-spicy glaze? I needed to figure it out at home. Good news: you don"t need a restaurant fryer or a free afternoon. Here"s my fast version.

What makes the crust so crackly

Two things. First, a light coating of cornstarch (or potato starch) instead of a heavy flour batter — that"s what gives you shatter, not bread. Second, the double fry. You fry once at a lower heat to cook the chicken through, rest it a few minutes, then fry again hot and fast to blister the outside. The second dip is the whole trick. Skip it and you get good chicken; do it and you get that chicken.

No deep fryer? An air fryer gets you surprisingly close — I"ll flag the swap below.

Fast Korean fried chicken

Serves 3–4 · about 40 minutes

For the chicken:

  • 1.5 lb boneless chicken thighs, cut into big bite-size pieces
  • 1 teaspoon salt, ½ teaspoon black pepper, 1 teaspoon grated ginger
  • ¾ cup cornstarch (or potato starch)
  • Neutral oil for frying

For the gochujang glaze:

  • 3 tablespoons gochujang
  • 3 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, grated
  • 1 teaspoon toasted sesame oil

Make it

  1. Toss the chicken with salt, pepper, and ginger. Add the cornstarch and toss until every piece is dry and dusty-coated. Let it sit 10 minutes — the coating hydrates and grips better.
  2. Heat 1.5 inches of oil to about 325°F. Fry the chicken in batches for 5–6 minutes until pale gold and cooked through. Drain on a rack, not paper — a rack keeps the bottoms crisp.
  3. Crank the oil to 375°F. Fry each batch a second time for 2–3 minutes until deep golden and hard-crunchy. Drain again.
  4. Whisk all the glaze ingredients in a wide pan and warm over low heat until glossy, about 1 minute. Kill the heat, add the chicken, and toss fast so the crust stays crisp.
  5. Finish with sesame seeds and sliced scallions. Eat immediately.

Air fryer version

Spray the coated chicken well with oil and air fry at 390°F for about 14–16 minutes, flipping halfway, until deeply golden. It won"t be identical to deep-fried, but glazed up it"s genuinely great on a Tuesday.

Two things I learned the hard way

Toss the chicken in the glaze right before serving, never earlier — sauce sitting on the crust turns it soggy within minutes. And taste your gochujang first; brands vary a lot in heat. If yours is fierce, pull back to 2 tablespoons and add an extra teaspoon of honey.
