Instructions
- Toss eggplant pieces with 1 teaspoon salt in a colander set over a bowl. Let sit 25-30 minutes, then press dry firmly with paper towels or a clean kitchen towel.
- Set up three dredging stations: flour seasoned with remaining 1/2 teaspoon salt; eggs whisked with mayonnaise; and panko mixed with semolina, half the Parmesan, oregano, and garlic powder.
- Coat each piece in flour, then egg wash, then the crumb mixture, pressing gently so the crumbs adhere.
- Arrange in a single layer in the air fryer basket, leaving space between pieces. Spray generously with olive oil.
- Air fry at 400°F (200°C) for 10-12 minutes, flipping and re-spraying with oil halfway through, until deep golden and crisp. Work in batches if needed.
