Crispy Air Fryer Eggplant Parmesan Bites (Sauce-on-the-Side Method)

Salted, semolina-panko-crusted eggplant bites air fried until shatter-crisp, finished with melted mozzarella and served with marinara on the side for dipping.

  • 1 large eggplant (about 1 lb / 450g), cut into 1-inch cubes or 1/2-inch rounds
  • 1 1/2 teaspoons kosher salt, divided
  • 1/2 cup all-purpose flour (or 1:1 gluten-free blend)
  • 2 large eggs
  • 2 tablespoons mayonnaise
  • 1 cup panko breadcrumbs
  • 1/4 cup fine semolina (or extra panko if unavailable)
  • 1/2 cup finely grated Parmesan, divided
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Olive oil spray
  • 1/2 cup shredded low-moisture mozzarella
  • 1/2 cup marinara sauce, warmed, for dipping
  • Fresh basil, torn, for serving

Instructions

  1. Toss eggplant pieces with 1 teaspoon salt in a colander set over a bowl. Let sit 25-30 minutes, then press dry firmly with paper towels or a clean kitchen towel.
  2. Set up three dredging stations: flour seasoned with remaining 1/2 teaspoon salt; eggs whisked with mayonnaise; and panko mixed with semolina, half the Parmesan, oregano, and garlic powder.
  3. Coat each piece in flour, then egg wash, then the crumb mixture, pressing gently so the crumbs adhere.
  4. Arrange in a single layer in the air fryer basket, leaving space between pieces. Spray generously with olive oil.
  5. Air fry at 400°F (200°C) for 10-12 minutes, flipping and re-spraying with oil halfway through, until deep golden and crisp. Work in batches if needed.
  6. Scatter a pinch of mozzarella and the remaining Parmesan over each bite. Air fry 2 more minutes at 380°F (193°C), just until the cheese melts and blisters.
  7. Let rest 2 minutes. Serve immediately with warm marinara on the side for dipping and torn basil scattered on top.

Notes

Do not skip the salting step — it removes both bitterness and excess moisture, which is the difference between a crisp crust and a soggy one. Keep the sauce off the eggplant until serving; baking it in is what makes most versions go soft. Reheat leftovers in the air fryer at 375°F for 3-4 minutes, never the microwave, to bring the crust back. Bites can be breaded and frozen raw on a tray, then air fried straight from frozen with 3-4 extra minutes.
