Notes
Use culinary or ceremonial-grade matcha for the best color and flavor; low-quality matcha can taste bitter and dull. Store leftovers covered at room temperature for 2 days or in the fridge for up to a week.
Frequently Asked Questions
What does matcha banana bread taste like?
Matcha banana bread has a subtle earthy, slightly grassy flavor from the green tea powder balanced by the natural sweetness of ripe bananas, creating a flavor that's less sweet and more complex than classic banana bread.
Can I use any type of matcha for matcha banana bread?
For the best color and flavor, use culinary or ceremonial-grade matcha. Lower-quality baking matcha can taste overly bitter and produce a duller green color in your loaf.
Why did my matcha banana bread turn out dense?
Overmixing the batter once the dry and wet ingredients combine develops too much gluten, resulting in a dense, gummy loaf. Mix just until no dry streaks remain.
Can I make this iced matcha banana bread ahead of time?
Yes, bake the loaf up to 2 days ahead and store it unglazed at room temperature. Add the icing shortly before serving for the freshest look and texture.
