Instructions

  1. Preheat oven to 400°F (200°C) and grease a 12-cup muffin tin or line with paper liners.
  2. In a large bowl, whisk together cornmeal, flour, granulated sugar, baking powder, salt, and cinnamon.
  3. In a separate bowl, whisk buttermilk, eggs, melted butter, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix.
  5. Fold in the diced peaches, reserving a few pieces for topping.
  6. Divide the batter evenly among the muffin cups, filling each about three-quarters full.
  7. Top each muffin with reserved peach pieces and a sprinkle of brown sugar.
  8. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean and tops are golden.
  9. Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool slightly before serving.
