Ingredients
- 2 lbs boneless, skinless chicken thighs, cut into 1 to 1.5-inch cubes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper

Instructions
- If using wooden skewers, soak them in water for at least 30 minutes.
- In a large bowl, toss the chicken cubes with olive oil, salt, pepper, garlic powder, and smoked paprika. Let marinate for at least 20 minutes at room temperature or up to 8 hours in the fridge.
- Meanwhile, make the peach BBQ sauce: combine diced peaches, ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, garlic, smoked paprika, salt, and cayenne in a saucepan over medium heat.
- Simmer the sauce for 15 to 20 minutes, stirring occasionally, until the peaches soften and break down.
- Blend the sauce with an immersion blender or in a countertop blender until smooth. Set aside half for basting and half for serving.
- Preheat the grill to medium-high heat and lightly oil the grates.
- Thread the marinated chicken onto skewers, leaving a little space between pieces.
- Grill the skewers for 10 to 12 minutes, turning occasionally, until the chicken is nearly cooked through.
- Brush generously with the peach BBQ sauce during the last 3 to 4 minutes of grilling, turning to caramelize on all sides.
