Ingredients
- 4 ears fresh corn, shucked
- 12 slices thin-cut bacon
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh cilantro and lime wedges, for serving
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with foil, topped with a wire rack.
- Microwave the shucked corn for 3-4 minutes to soften slightly, then let cool enough to handle.
- Stand each cob upright and carefully slice in half lengthwise, then slice each half in half again to make 4 long strips per cob.
- In a small bowl, mix olive oil, smoked paprika, garlic powder, chili powder, salt, and pepper.
- Brush or rub the spice mixture evenly over all sides of the corn strips.
- Wrap each corn strip tightly in a slice of bacon, tucking the ends underneath or securing with a toothpick.
- Arrange the wrapped corn ribs on the wire rack, curved side up.
- Bake for 25-30 minutes, until the bacon is crisp and golden, broiling for the last 2-3 minutes for extra crispiness if desired.
- Let cool for 5 minutes, then garnish with fresh cilantro and a squeeze of lime before serving.

For extra crispy bacon, use the air fryer at 375°F for 12-15 minutes instead of the oven. Secure bacon ends with toothpicks if they tend to unravel.
