Bacon-Wrapped Corn Ribs

Sweet corn on the cob sliced into curly ribs, wrapped in crispy bacon, and roasted until golden and smoky.

  • 4 ears fresh corn, shucked
  • 12 slices thin-cut bacon
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh cilantro and lime wedges, for serving

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with foil, topped with a wire rack.
  2. Microwave the shucked corn for 3-4 minutes to soften slightly, then let cool enough to handle.
  3. Stand each cob upright and carefully slice in half lengthwise, then slice each half in half again to make 4 long strips per cob.
  4. In a small bowl, mix olive oil, smoked paprika, garlic powder, chili powder, salt, and pepper.
  5. Brush or rub the spice mixture evenly over all sides of the corn strips.
  6. Wrap each corn strip tightly in a slice of bacon, tucking the ends underneath or securing with a toothpick.
  7. Arrange the wrapped corn ribs on the wire rack, curved side up.
  8. Bake for 25-30 minutes, until the bacon is crisp and golden, broiling for the last 2-3 minutes for extra crispiness if desired.
  9. Let cool for 5 minutes, then garnish with fresh cilantro and a squeeze of lime before serving.

Notes

For extra crispy bacon, use the air fryer at 375°F for 12-15 minutes instead of the oven. Secure bacon ends with toothpicks if they tend to unravel.
