  • 1/2 cup cooked rolled oats, cooled slightly
  • 1 scoop (about 25g) vanilla plant-based protein powder
  • 2 tablespoons almond butter
  • 1 tablespoon chia seeds
  • 1 tablespoon hemp seeds
  • 1/2 cup mixed berries (strawberries, blueberries)
  • 1/2 banana, sliced
  • 2 tablespoons granola
  • 1 tablespoon pumpkin seeds
  • 1 teaspoon maple syrup
  • Pinch of cinnamon

Instructions

  1. In a mixing bowl, whisk the plant-based yogurt with the vanilla protein powder until smooth and creamy, about 1 minute.
  2. Fold in the cooled cooked oats and chia seeds, stirring until fully combined.
  3. Spoon the mixture into a serving bowl and spread it evenly.
  4. Drizzle the almond butter over the top in a swirl pattern.
  5. Arrange the sliced banana and mixed berries over one half of the bowl.
  6. Sprinkle granola, hemp seeds, and pumpkin seeds over the remaining space.
  7. Finish with a light drizzle of maple syrup and a dusting of cinnamon.
  8. Serve immediately while the oats are still warm and creamy.

Notes

Cook the oats the night before and refrigerate for an even faster morning assembly. Swap almond butter for peanut or cashew butter, and use any seasonal fruit you have on hand. Store leftover components separately for up to 3 days, but assemble the bowl fresh for the best texture.
