Whipped Cottage Cheese Protein Bowl (The No-Weep Method)

A whipped cottage cheese protein bowl stabilized with a gelatin trick so it stays fluffy for hours, topped with roasted honey fruit and pistachio dukkah.

  • 1 1/2 cups 2% cottage cheese, cold (not the ‘smooth" or ‘whipped" tub kind)
  • 1/2 tsp unflavored gelatin
  • 1 tbsp cold water, for blooming
  • 23 tbsp ice water, for blending
  • 1 tsp fresh lemon juice
  • Pinch of fine salt
  • 1 tsp honey, plus more for the fruit
  • 1 ripe peach or plum, halved and pitted
  • 1/2 tsp cinnamon
  • 2 tbsp shelled pistachios, roughly chopped
  • 1 tbsp sesame seeds
  • Flaky salt, for the dukkah and finishing
  • 1 tbsp tahini, loosened with 1 tsp warm water
  • Fresh mint, torn, for serving

Instructions

  1. Bloom the gelatin: sprinkle it over the 1 tbsp cold water in a small bowl and let sit 5 minutes until it looks like applesauce. Microwave 8-10 seconds just until liquid, then set aside to cool slightly (it should still be pourable, not hot).
  2. Broil the fruit: cut side up on a small tray, drizzle with honey and dust with cinnamon. Broil 4-6 minutes until blistered and juicy. Set aside.
  3. Toast the pistachios and sesame seeds in a dry skillet over medium heat for 2 minutes, tossing often, until fragrant. Cool, then pulse or chop with a big pinch of flaky salt to make a rough dukkah.
  4. Add the cottage cheese, 2 tbsp ice water, lemon juice, and salt to a blender. Blend on high 60-90 seconds, stopping to scrape down the sides every 20-30 seconds, until glossy, doubled in volume, and completely smooth with no visible curds.
  5. With the blender running on low, stream in the cooled gelatin liquid and the honey. Blend 15 more seconds to fully incorporate. If it seems too thick, add the remaining tablespoon of ice water.
  6. Divide the whip between two bowls and chill uncovered 15-20 minutes to let the gelatin set slightly — this is what keeps it from weeping later.
  7. Top with the roasted fruit, a scatter of dukkah, a swirl of loosened tahini, torn mint, and one more pinch of flaky salt. Serve right away or refrigerate covered up to 3 days.

Notes

Full-fat cottage cheese works but whips noticeably denser — stick with 2% for maximum fluff. No gelatin on hand? Skip it and eat within the hour, since the whip will start weeping without a stabilizer. For a vegan version, swap silken tofu for the cottage cheese and use agar instead of gelatin (bloom in hot water, add while warm, and work fast since agar sets at room temperature). Nut allergy: swap the pistachios for toasted pepitas in the dukkah. Want it savory instead: skip the fruit and honey, and top with olive oil, everything bagel seasoning, and cucumber instead.
