The Cozy Cabbage Soup Everyone"s Bookmarking This Fall

A cozy cabbage soup recipe with butter-charred cabbage, smoked paprika, and a parmesan rind for deep, savory flavor.

  • 1 head green cabbage, cut into 68 wedges through the core
  • 4 tbsp butter, divided
  • 1 yellow onion, thinly sliced
  • 4 garlic cloves, minced
  • 1 tsp smoked paprika
  • 1 tsp caraway seeds
  • 1 parmesan rind (or 1 tbsp white miso)
  • 6 cups chicken or vegetable broth
  • 1 bay leaf
  • 23 sprigs fresh thyme
  • 1 (15 oz) can white beans, drained
  • 1 tbsp apple cider vinegar
  • Salt and black pepper, to taste
  • Chili crisp and grated parmesan, for serving

Instructions

  1. Melt 2 tbsp butter in a large heavy pot over medium-high heat. Working in batches so you don"t crowd the pot, sear the cabbage wedges cut-side down until deeply browned, 4-5 minutes per side. Remove and set aside.
  2. Add the remaining 2 tbsp butter to the pot. Sauté the onion until soft, about 5 minutes, then add the garlic, smoked paprika, and caraway seeds and cook 1 minute until fragrant.
  3. Return the seared cabbage to the pot. Add the broth, parmesan rind, bay leaf, and thyme. Bring to a simmer, cover partially, and cook 25-30 minutes until the cabbage is fork-tender.
  4. Remove the parmesan rind, bay leaf, and thyme sprigs. Stir in the white beans and apple cider vinegar. Season with salt and pepper to taste.
  5. Ladle into bowls, making sure everyone gets a charred cabbage wedge. Top with chili crisp and grated parmesan.

Notes

Don"t skip the sear — a crowded pot steams the cabbage instead of charring it, so work in batches. No parmesan rind? A spoonful of white miso or a dash of fish sauce gets you the same umami depth. Leftovers keep well for 4 days and taste even better the next day.
