Sweet & Spicy Chicken Wrap – The Swicy Lunch You"ll Want on Repeat

Seared chicken with a caramelized dry-rub crust and a hot honey-gochujang finish, rolled with crunchy pickled slaw and a gochujang-lime crema.

  • 1 lb boneless chicken thighs (or breasts), cut into strips
  • 1 tbsp brown sugar
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1 tbsp neutral oil
  • 2 tbsp hot honey
  • 1 tbsp gochujang
  • 1 tsp rice vinegar (for glaze)
  • 2 cups shredded cabbage
  • 1/2 cup shredded carrot
  • 2 tbsp rice vinegar (for slaw)
  • 1/4 tsp salt (for slaw)
  • 1/3 cup mayonnaise
  • 1 tsp gochujang (for crema)
  • 1 tsp lime juice
  • 4 large flour tortillas

Instructions

  1. Toss cabbage and carrot with 2 tbsp rice vinegar and 1/4 tsp salt; set aside to quick-pickle while you cook the chicken.
  2. Whisk mayonnaise, 1 tsp gochujang, and lime juice together for the crema; set aside.
  3. Pat chicken dry. Mix brown sugar, smoked paprika, cayenne, garlic powder, and salt, then rub all over the chicken.
  4. Heat oil in a skillet over high heat until shimmering. Sear chicken in a single layer, 3-4 minutes per side, until deeply caramelized and cooked through. Don"t crowd the pan.
  5. Remove chicken from heat and let rest 5 minutes.
  6. Whisk hot honey, gochujang, and 1 tsp rice vinegar together, then brush or toss over the warm (not hot) chicken.
  7. Slice chicken. Warm tortillas, spread with gochujang-lime crema, layer chicken and pickled slaw, and roll tightly.

Notes

Rest the chicken before slicing — cutting it right off the pan releases juice into the tortilla and is the main cause of a soggy wrap. Add the honey glaze off heat, not in the pan, or the sugar will burn before the chicken finishes cooking. No hot honey? Whisk regular honey with a pinch of cayenne and a few drops of chili crisp oil. Chicken thighs are more forgiving than breast during the hard sear since the extra fat prevents drying out.
