Sweet & Spicy Chicken Wrap – Easy Fajita-Style Lunch

Seared chicken thighs lacquered in a chipotle-honey glaze, wrapped with pickled onions and lime crema for a fajita-style lunch with real char.

  • 1.5 lbs boneless, skinless chicken thighs, sliced into strips
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp ground cumin
  • 2 tbsp neutral oil (avocado or vegetable)
  • 2 tbsp hot honey
  • 1 chipotle pepper in adobo, minced, plus 1 tbsp adobo sauce
  • 1 tbsp lime juice
  • 1 small red onion, thinly sliced
  • 1/4 cup apple cider vinegar
  • 1 tsp sugar
  • 1/2 cup sour cream or Greek yogurt
  • 1 tbsp lime juice (for crema)
  • 4 large flour tortillas
  • 1 cup shredded lettuce or cabbage
  • Cilantro, for serving

Instructions

  1. Combine sliced red onion, vinegar, sugar, and a pinch of salt in a small bowl. Set aside to pickle while you cook.
  2. Whisk sour cream, 1 tbsp lime juice, and a pinch of salt for the crema. Set aside.
  3. Whisk hot honey, minced chipotle, adobo sauce, and 1 tbsp lime juice in a small bowl. This is your glaze.
  4. Toss chicken strips with salt, pepper, and cumin only — no sugar or glaze yet.
  5. Heat oil in a large skillet over high heat until shimmering. Sear chicken in a single layer, undisturbed, 3-4 minutes per side until deeply browned.
  6. Remove the pan from heat. Pour the glaze over the chicken and toss immediately, using the residual heat to caramelize it onto the chicken without burning it.
  7. Warm tortillas directly over a gas flame or in a dry skillet until lightly charred and pliable.
  8. Fill each tortilla with glazed chicken, shredded lettuce, pickled onions, a drizzle of lime crema, and cilantro. Fold and serve immediately.

Notes

Sear the chicken bare and glaze it off-heat — adding the glaze before searing will burn the sugar before the chicken cooks through. Keep glazed chicken separate from tortillas and toppings if meal-prepping; assemble just before eating so the tortillas don"t steam and tear.
