Cottage Cheese Egg Bake

  • 6 large eggs
  • 2 cups cottage cheese
  • 1 cup shredded cheese (your choice)
  • 1 cup chopped spinach
  • ½ cup diced bell pepper
  • ½ cup chopped onion
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. In a large bowl, whisk together eggs until well-beaten; mix in cottage cheese until combined.
  3. Stir in chopped spinach, bell pepper, onion, garlic powder, onion powder, salt, and black pepper until evenly distributed.
  4. Fold in shredded cheese gently; reserve some for topping if desired.
  5. Pour mixture into the greased dish and top with reserved cheese. Bake for 40-45 minutes until set and golden.
  6. Allow cooling for 5 minutes before slicing; serve warm.
