Pumpkin Snickerdoodles

Soft and chewy pumpkin snickerdoodles rolled in cinnamon sugar, packed with cozy fall spices and real pumpkin flavor.

  • 2 3/4 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 3/4 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar, divided
  • 1/3 cup pumpkin puree, blotted dry with paper towels
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons ground cinnamon (for rolling)

Instructions

  1. In a medium bowl, whisk together flour, cream of tartar, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Set aside.
  2. In a large bowl, cream together softened butter and 1 cup of sugar until light and fluffy, about 2 minutes.
  3. Beat in the blotted pumpkin puree, egg, and vanilla extract until smooth and well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing just until a soft dough forms. Do not overmix.
  5. Cover the dough and chill in the refrigerator for at least 30 minutes, or up to overnight.
  6. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  7. In a small bowl, mix the remaining 1/2 cup sugar with the 2 tablespoons cinnamon for rolling.
  8. Scoop dough into 1.5-tablespoon balls, roll into smooth rounds, then roll each ball generously in the cinnamon-sugar mixture.
  9. Place cookies 2 inches apart on prepared baking sheets and gently flatten each slightly with your palm.
  10. Bake for 10-12 minutes, until the edges are set but the centers still look slightly soft.
  11. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra crackle, freeze rolled dough balls for 10 minutes before baking. Store in an airtight container for up to 5 days or freeze baked cookies for up to 3 months.
