Sweet Mini Peppers

Ingredients

  • 8 ounces mini peppers
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon Italian seasoning

Instructions

  1. Preheat oven to 400 degrees F. Place foil on a baking sheet.
  2. Cut off the stem of peppers and then cut peppers in half length-wise. Remove seeds and any membrane.
  3. Put pepper halves in a bowl and toss with oil and seasoning.
  4. Spread peppers out on foil lined baking sheet and roast for about 20 minutes. Serve warm.
