  • 1/4 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 oz strawberry pudding mix
  • 1 cup sugar
  • 1/2 cup sour cream
  • 3/4 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 2 eggs

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Mix crushed graham crackers and melted butter until combined. Press mixture into the bottom of a muffin tin lined with paper liners to form crusts.
  3. In a large bowl, beat softened cream cheese until smooth.
  4. Add strawberry pudding mix, sugar, sour cream, vanilla extract, and salt. Mix until well combined.
  5. Add eggs one at a time, mixing just until incorporated.
  6. Pour cheesecake batter over crusts in muffin tin, filling each about 3/4 full.
  7. Bake for 20 minutes or until centers are set.
  8. Remove from oven and cool completely in the pan on a wire rack.
  9. Refrigerate for at least 1 hour before serving.
  10. Top with fresh strawberries or strawberry topping if desired.
