Matcha Baked Donuts

Soft, fluffy baked donuts infused with matcha green tea and topped with a light matcha glaze.

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons culinary-grade matcha powder
  • 3/4 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup whole milk
  • 1/3 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 1 teaspoon matcha powder, for glaze
  • 2 to 3 tablespoons milk, for glaze

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a donut pan.
  2. In a large bowl, whisk together the flour, matcha powder, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk the eggs, milk, melted butter, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold together until just combined; do not overmix.
  5. Spoon or pipe the batter into the prepared donut pan, filling each cavity about two-thirds full.
  6. Bake for 10 to 12 minutes, or until the donuts spring back when lightly touched.
  7. Let the donuts cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. For the glaze, whisk together the powdered sugar, matcha powder, and milk until smooth and pourable.
  9. Dip the top of each cooled donut into the glaze and let set for a few minutes before serving.

Notes

Store leftover donuts in an airtight container at room temperature for up to 2 days, or refrigerate for up to 5 days. Use culinary-grade matcha for the best color and flavor in baking.
