Low-Carb Tuscan Chicken

Ingredients

  • 1 1/2 pounds boneless chicken breasts, chopped into 1 inch pieces
  • 1 1/2tsp creole seasoning
  • 1/2 tsp onion powder
  • 3/4 tsp garlic powder
  • 1 1/2 tbsp extra virgin olive oil
  • 2 broccoli crowns, chopped
  • 1 cup grape tomatoes
  • 1/4 cup sun-dried tomatoes
  • a pinch of crushed red pepper flakes
  • 1/2 tsp dried oregano
  • 1/2 cup half and half
  • 1/4 cup shredded parmesan cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. To a large skillet, add olive oil and heat over medium high heat.
  2. Season chicken with creole seasoning, onion powder, and garlic powder. Add to pan and saute for about 10 minutes, stirring occassionally.
  3. Add in broccoli and grape tomatoes and stir. Add in crushed red pepper flakes, oregano, and sun-dried tomatoes. Cook, stirring occassionally, for about 10 minutes.
  4. Stir in half and half. Top with shredded parmesan and mozzarella. Allow cheese to melt on top and remove from heat and serve.
