Jennifer Aniston Salad (Viral High-Protein Quinoa Salad) 🥗
- 2 cups orzo (cooked)
- 1 cup cucumber (diced)
- ¼ cup red onion (thin slices)
- 1 – 389 ml can chickpeas
- ½ cup feta
- ¼ cup pistachios
- ½ large avocado
- 2 tbsp. olive oil
- 2 tbsp. fresh lemon juice
- 1 tsp. salt
- 1 tsp. black pepper
- 1 tsp. garlic powder
- 1 tsp. onion powder
- ½ cup fresh parsley (chopped)
- ¼ cup fresh mint (chopped)
- Cook the orzo according to the instructions on the package. Allow to cool.
- Drain and rinse the chickpeas. Set aside.
- In a large bowl, combine ALL of the ingredients.
- Mix to combine and adjust seasoning to taste.
