Honey-Roasted Fig & Burrata Flatbread

Crisp flatbread topped with jammy honey-roasted figs and torn burrata that melts into soft, creamy pockets.

  • 1 lb pizza dough or 2 store-bought flatbreads
  • 68 fresh figs, halved
  • 2 tbsp honey, divided
  • 4 tbsp olive oil, divided
  • 2 cloves garlic, grated
  • 8 oz burrata cheese
  • 2 tbsp fresh thyme leaves or torn basil
  • Flaky sea salt, to finish
  • Cracked black pepper, to finish
  • Pinch chili flakes, optional

Instructions

  1. Preheat oven to 425°F (220°C). Line two baking sheets.
  2. Arrange fig halves cut-side up on one sheet, drizzle with 1 tbsp honey, and roast 10-12 minutes until the edges caramelize and the centers turn jammy. Set aside with their juices.
  3. Stretch or roll the dough onto the second sheet, brush with 2 tbsp olive oil, and scatter the grated garlic over the surface.
  4. Bake the flatbread 10-12 minutes, until golden and crisp, checking a few minutes early if using pre-made flatbread.
  5. Remove the flatbread from the oven and immediately tear the burrata into large pieces directly on top; the residual heat will soften it without melting it flat.
  6. Scatter the roasted figs and their pan juices over the burrata.
  7. Drizzle with remaining honey (warmed with chili flakes if using), then finish with fresh thyme or basil, flaky salt, and cracked pepper.
  8. Slice and serve immediately while the crust is still crisp.

Notes

Roast the figs on their own tray, not on the dough — this is the step that keeps the crust from turning soggy. Tear the burrata rather than slicing it so it slumps into craggy, creamy pockets instead of one flat melted layer. No fresh figs? Use dried figs simmered 5 minutes in water with the honey until plump, then drain and proceed. Crisped prosciutto or a scatter of toasted walnuts are good additions if you want more savory weight.
