High-Fiber Chocolate Chip Cookies (Chewy, Not Dry)

Chewy chocolate chip cookies boosted with oat bran, wheat bran, and flaxseed for real fiber without the dry, sandy texture.

  • 1 cup (2 sticks) unsalted butter, browned and slightly cooled
  • 1/3 cup oat bran
  • 1/3 cup wheat bran
  • 3 tablespoons ground flaxseed
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon fine sea salt
  • 3/4 cup coconut sugar or brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 3/4 cups dark chocolate chunks (70% cocoa or higher)
  • Flaky sea salt, for finishing

Instructions

  1. Brown the butter in a saucepan over medium heat until it smells nutty and the solids turn golden-brown, 5-7 minutes. Immediately stir in the oat bran, wheat bran, and flaxseed. Let sit 10 minutes to bloom and cool slightly.
  2. Whisk together the flour, baking soda, and fine sea salt in a bowl; set aside.
  3. In a large bowl, beat the bloomed butter-bran mixture with both sugars until glossy, about 2 minutes. Beat in the eggs one at a time, then the vanilla.
  4. Fold in the flour mixture just until no dry streaks remain, then fold in the chocolate chunks.
  5. Cover and chill the dough at least 30 minutes (a few hours is better) — this lets the bran fully absorb moisture and prevents spreading.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment.
  7. Scoop 2-tablespoon portions of dough onto sheets, spaced 2 inches apart. Sprinkle with flaky sea salt.
  8. Bake 11-13 minutes, until edges are set but centers still look slightly underdone. Cool on the sheet 5 minutes before transferring to a rack.

Notes

Do not skip blooming the bran in hot browned butter — this is what keeps the cookies chewy instead of dry and sandy. If short on time, flatten the dough into a disc before chilling so it cools faster. Store in an airtight container up to 5 days, or freeze scooped dough balls up to 3 months and bake straight from frozen, adding 1-2 minutes.
