For the Crust:
2 cups all-purpose flour
1 1/2 cups granulated sugar
1/2 cup unsalted butter, softened
3 large eggs
1 cup whole milk
1/2 cup white chocolate, melted
1 tsp vanilla extract
2 tsp baking powder
1/2 tsp salt
1 can (20 oz) crushed pineapple, drained
1/4 cup brown sugar
1 tsp cornstarch
1 cup heavy cream
1/2 cup powdered sugar
Instructions
1. Prepare the Crust:
Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large bowl, cream together butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then stir in melted white chocolate and vanilla.
In another bowl, whisk flour, baking powder, and salt. Gradually add dry ingredients to wet mixture, alternating with milk. Mix until just combined.
Divide batter evenly between prepared pans. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Cool completely.
For the pineapple filling: In a saucepan, combine crushed pineapple, brown sugar, and cornstarch. Cook over medium heat until thickened, about 5 minutes. Cool completely.
For the whipped cream: Beat heavy cream and powdered sugar until stiff peaks form.
Assemble the cake by spreading pineapple filling between layers and frosting the outside with whipped cream.
