For the Crust:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1 cup whole milk
- 1/2 cup white chocolate, melted
- 1 tsp vanilla extract
- 2 tsp baking powder
- 1/2 tsp salt
- 1 can (20 oz) crushed pineapple, drained
- 1/4 cup brown sugar
- 1 tsp cornstarch
- 1 cup heavy cream
- 1/2 cup powdered sugar
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, cream together butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then stir in melted white chocolate and vanilla.
- In another bowl, whisk flour, baking powder, and salt. Gradually add dry ingredients to wet mixture, alternating with milk. Mix until just combined.
- Divide batter evenly between prepared pans. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Cool completely.
- For the pineapple filling: In a saucepan, combine crushed pineapple, brown sugar, and cornstarch. Cook over medium heat until thickened, about 5 minutes. Cool completely.
- For the whipped cream: Beat heavy cream and powdered sugar until stiff peaks form.
- Assemble the cake by spreading pineapple filling between layers and frosting the outside with whipped cream.
