Freezer-Friendly Breakfast Burritos (Make-Ahead & Easy)

Hearty, cheesy freezer breakfast burritos loaded with eggs, sausage, and potatoes—perfect for meal prep and busy mornings.

  • 10 large eggs
  • 1/4 cup milk
  • 1 teaspoon salt, plus more to taste
  • 1/2 teaspoon black pepper
  • 1 tablespoon butter
  • 1 pound breakfast sausage, casings removed
  • 2 cups frozen hash brown potatoes, thawed
  • 1 tablespoon olive oil
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onion
  • 1 1/2 cups shredded cheddar cheese
  • 8 large burrito-size flour tortillas
  • Salsa, hot sauce, or avocado, for serving (optional)

Instructions

  1. Cook the sausage in a large skillet over medium heat, breaking it up as it browns, about 6-8 minutes. Remove and set aside.
  2. In the same skillet, heat the olive oil and sauté the onion and bell peppers until softened, 3-4 minutes.
  3. Add the hash browns to the skillet, season with salt and pepper, and cook until golden and crisp, about 8 minutes. Remove and set aside.
  4. Whisk the eggs, milk, 1 teaspoon salt, and pepper together. Melt the butter in a clean skillet over medium-low heat, add the eggs, and scramble gently until just set (they will finish cooking when reheated).
  5. Warm the tortillas briefly in a dry skillet or microwave to make them pliable.
  6. Divide the eggs, sausage, potato mixture, and cheddar cheese evenly among the tortillas, layering the filling in the center of each.
  7. Fold in the sides of each tortilla, then roll tightly into a burrito.
  8. Wrap each burrito individually and tightly in foil or plastic wrap.
  9. Place the wrapped burritos in a labeled, freezer-safe bag or container and freeze for up to 3 months.
  10. To reheat, unwrap a burrito, wrap it in a damp paper towel, and microwave for 2-3 minutes, flipping halfway, or bake at 350°F for 25-30 minutes from frozen.

Notes

Let the fillings cool slightly before assembling to prevent soggy tortillas. For extra flavor, add a spoonful of salsa or diced jalapeños before rolling. Freezer breakfast burritos can be swapped with bacon, chorizo, or a meatless option like black beans for variety.
