Decadent Carrot Cake Bars

Moist and flavorful carrot cake bars topped with a rich cream cheese frosting, perfect for a decadent dessert or snack.

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 cup vegetable oil
  • 3 large eggs
  • 2 cups finely grated carrots
  • 1/2 cup chopped walnuts (optional)
  • 1 teaspoon vanilla extract
  • For the frosting:
  • 8 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, beat granulated sugar, brown sugar, and oil until well combined.
  4. Add eggs one at a time, beating well after each addition, then stir in vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in grated carrots and walnuts if using.
  7. Pour batter into prepared pan and spread evenly.
  8. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow bars to cool completely in the pan on a wire rack.
  10. For the frosting, beat cream cheese and butter together until smooth.
  11. Gradually add powdered sugar and vanilla extract, beating until creamy.
  12. Spread frosting evenly over cooled bars.
  13. Cut into squares and serve.

Notes

For best results, use freshly grated carrots and allow the bars to cool completely before frosting to prevent melting. Walnuts add a nice crunch but can be omitted for a nut-free version.
