Easy Browned Butter Apple Cider Cookies
- 1/2 cup unsalted butter, browned and cooled to paste
- 2/3 cup packed dark brown sugar
- 1/2 tbsp pure maple syrup
- 2 1/2 tbsp apple butter
- 1 tbsp concentrated apple cider (cooked down to 1/4 original amount, cooled)
- 1/2 large egg yolk, at room temperature
- 1/2 tsp vanilla bean paste or extract
- 1/4 tsp fine sea salt
- 3/8 tsp baking soda
- 1/4 tsp baking powder
- 3/8 tsp ground cinnamon
- 1/8 tsp each of ground nutmeg, allspice, and ginger
- 140 g all-purpose flour
- 1/3 cup roughly chopped white chocolate or white chocolate chips
- 2 to 3 tbsp maple cream
- Or 1/2 cup powdered sugar plus 1 tbsp reduced apple cider (for an alternate glaze)
