Easy Browned Butter Apple Cider Cookies

  • 1/2 cup unsalted butter, browned and cooled to paste
  • 2/3 cup packed dark brown sugar
  • 1/2 tbsp pure maple syrup
  • 2 1/2 tbsp apple butter
  • 1 tbsp concentrated apple cider (cooked down to 1/4 original amount, cooled)
  • 1/2 large egg yolk, at room temperature
  • 1/2 tsp vanilla bean paste or extract
  • 1/4 tsp fine sea salt
  • 3/8 tsp baking soda
  • 1/4 tsp baking powder
  • 3/8 tsp ground cinnamon
  • 1/8 tsp each of ground nutmeg, allspice, and ginger
  • 140 g all-purpose flour
  • 1/3 cup roughly chopped white chocolate or white chocolate chips
  • 2 to 3 tbsp maple cream
  • Or 1/2 cup powdered sugar plus 1 tbsp reduced apple cider (for an alternate glaze)
