For the Crust:
2 lbs boneless, skinless chicken breasts, cubed
3 large onions, thinly sliced
2 tbsp butter
1 tbsp olive oil
1 tsp sugar
1 tsp thyme
1 tsp garlic powder
1 cup beef broth
1 cup shredded Gruyere cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 cup French fried onions
Salt and pepper to taste
Instructions
1. Prepare the Crust:
Preheat oven to 375°F (190°C).
In a large skillet, heat butter and olive oil over medium heat. Add onions, sugar, and a pinch of salt. Cook, stirring occasionally, until caramelized (about 20 minutes).
Add thyme, garlic powder, and beef broth to the onions. Simmer for 5 minutes until slightly reduced.
Arrange chicken cubes in a greased 9×13 baking dish. Season with salt and pepper.
Pour the onion mixture over the chicken. Top with Gruyere, mozzarella, and Parmesan cheeses.
Bake for 25-30 minutes until chicken is cooked through and cheese is bubbly.
Sprinkle French fried onions on top and bake for an additional 5 minutes until golden.
