Cheesy French Onion Chicken Casserole

For the Crust:

  • 2 lbs boneless, skinless chicken breasts, cubed
  • 3 large onions, thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp sugar
  • 1 tsp thyme
  • 1 tsp garlic powder
  • 1 cup beef broth
  • 1 cup shredded Gruyere cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup French fried onions
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat butter and olive oil over medium heat. Add onions, sugar, and a pinch of salt. Cook, stirring occasionally, until caramelized (about 20 minutes).
  3. Add thyme, garlic powder, and beef broth to the onions. Simmer for 5 minutes until slightly reduced.
  4. Arrange chicken cubes in a greased 9×13 baking dish. Season with salt and pepper.
  5. Pour the onion mixture over the chicken. Top with Gruyere, mozzarella, and Parmesan cheeses.
  6. Bake for 25-30 minutes until chicken is cooked through and cheese is bubbly.
  7. Sprinkle French fried onions on top and bake for an additional 5 minutes until golden.
