For the Crust:
- 2 lbs boneless, skinless chicken breasts, cubed
- 3 large onions, thinly sliced
- 2 tbsp butter
- 1 tbsp olive oil
- 1 tsp sugar
- 1 tsp thyme
- 1 tsp garlic powder
- 1 cup beef broth
- 1 cup shredded Gruyere cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup French fried onions
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- In a large skillet, heat butter and olive oil over medium heat. Add onions, sugar, and a pinch of salt. Cook, stirring occasionally, until caramelized (about 20 minutes).
- Add thyme, garlic powder, and beef broth to the onions. Simmer for 5 minutes until slightly reduced.
- Arrange chicken cubes in a greased 9×13 baking dish. Season with salt and pepper.
- Pour the onion mixture over the chicken. Top with Gruyere, mozzarella, and Parmesan cheeses.
- Bake for 25-30 minutes until chicken is cooked through and cheese is bubbly.
- Sprinkle French fried onions on top and bake for an additional 5 minutes until golden.
