Cheesy Baked Zucchini Boats (The Dry-Roast Trick for No Soggy Bottoms)

Sausage-and-three-cheese stuffed zucchini boats with a dry-roast trick that keeps them from turning watery.

  • 4 medium zucchini, halved lengthwise
  • 1 tbsp olive oil, plus more for the pan
  • Salt and black pepper
  • 1/2 lb Italian sausage, casings removed
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1/2 cup cherry tomatoes, halved (or sun-dried tomatoes)
  • 1/2 cup ricotta cheese
  • 1 egg, lightly beaten
  • 1 cup shredded mozzarella, divided
  • 1/3 cup grated parmesan, divided
  • 1/4 cup panko breadcrumbs
  • Fresh basil, torn, for serving
  • Red pepper flakes, optional

Instructions

  1. Preheat oven to 425°F. Halve zucchini lengthwise and scoop out the centers, leaving a 1/4-inch shell. Chop the scooped pulp, salt it, and set it in a colander to drain.
  2. Rub the shells with olive oil, season lightly with salt, and arrange cut-side down on a baking sheet. Roast 12-15 minutes, until the flesh sweats and the edges start to brown. This step pulls out excess water before filling.
  3. Meanwhile, cook the sausage in a skillet over medium-high heat, breaking it up, until browned. Add onion and garlic and cook until soft, about 4 minutes.
  4. Squeeze any extra liquid from the drained zucchini pulp, then stir it into the skillet with the tomatoes. Cook 3-4 minutes until most of the liquid has cooked off.
  5. Remove from heat and stir in the ricotta, egg, half the mozzarella, and half the parmesan until combined.
  6. Flip the roasted shells cut-side up and fill generously with the sausage mixture. Top with remaining mozzarella and parmesan mixed with panko.
  7. Bake 18-20 minutes until the cheese is melted and bubbling. Broil 1-2 minutes for extra color if needed.
  8. Rest 5 minutes, scatter with basil and red pepper flakes, and serve.

Notes

Don"t skip the dry-roast step — it"s the difference between a sturdy boat and a watery one. Choose medium zucchini (7-8 inches); larger ones are seedy and hold even more water. Leftovers reheat well in a 375°F oven for 10 minutes; the microwave will make them soggy.
