Buffalo Chicken Tailgate Dip That Never Breaks (Crockpot Method)

A crockpot-stable buffalo chicken dip that stays thick, spicy, and smooth for hours on warm — no grease, no breaking.

  • 2 (8 oz) blocks cream cheese, softened
  • 1 cup mayonnaise
  • 1 cup blue cheese or ranch dressing
  • 1½ cups hot sauce (such as Frank"s RedHot), divided
  • 1 tbsp cornstarch
  • 3 cups shredded rotisserie chicken
  • 1½ cups shredded sharp cheddar, divided
  • 1 cup blue cheese crumbles
  • 2 tbsp unsalted butter, melted
  • Sliced scallions, for garnish
  • Celery sticks and tortilla chips, for serving

Instructions

  1. In a bowl, toss the shredded chicken with ½ cup of the hot sauce and the melted butter. Let it sit while you prep everything else — this is your dry-brine step.
  2. In a separate small bowl, whisk the cornstarch into the remaining 1 cup hot sauce until fully dissolved, with no lumps.
  3. In a slow cooker (or large bowl if baking), beat the softened cream cheese, mayonnaise, and dressing together until smooth.
  4. Stir in the cornstarch-hot sauce mixture, the brined chicken, 1 cup of the cheddar, and the blue cheese crumbles until fully combined.
  5. Cover and cook on low for 2 hours, stirring once at the 1-hour mark, until hot and completely smooth.
  6. Sprinkle the remaining ½ cup cheddar over the top, cover, and cook 10 more minutes until melted.
  7. Switch the slow cooker to warm for serving. Stir every 45 minutes or so to keep the surface from skinning over.
  8. Garnish with sliced scallions just before serving, with celery sticks and tortilla chips alongside.

Notes

Oven option: bake at 375°F for 25-30 minutes instead of slow cooking, broiling the last 2 minutes to brown the top cheese. Use block cream cheese, not whipped tub-style — it won"t set up the same way. This dip can be assembled a day ahead through step 4 and refrigerated; add 20-30 minutes to the cook time if starting cold. Leftovers keep 4 days refrigerated and reheat well with a splash of hot sauce stirred back in.
