Brown Butter Skillet Chocolate Chip Cookie

A giant, gooey chocolate chip cookie baked in a cast iron skillet with rich, nutty brown butter for extra depth of flavor.

  • 1/2 cup unsalted butter
  • 3/4 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/4 cups semisweet chocolate chips
  • Flaky sea salt, for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Melt the butter in a 10-inch cast iron skillet over medium heat, swirling often, until it turns golden brown and smells nutty, about 5 minutes. Pour into a mixing bowl and let cool for 10 minutes.
  3. Whisk the brown sugar and granulated sugar into the browned butter until combined.
  4. Whisk in the egg, egg yolk, and vanilla extract until smooth and glossy.
  5. Stir in the flour, baking soda, and salt until just combined.
  6. Fold in the chocolate chips, reserving a small handful for the top.
  7. Press the dough evenly into the same skillet, scattering the reserved chocolate chips on top.
  8. Bake for 20-25 minutes, until the edges are golden and the center is just set but still soft.
  9. Sprinkle with flaky sea salt and let cool for 10 minutes before serving with ice cream.

Notes

Watch the butter closely as it browns — it can go from golden to burnt quickly. For extra gooeyness, slightly underbake and let the skillet"s residual heat finish the center. Leftovers reheat well in a 300°F oven for 5 minutes.
