Do not boil raw bratwurst before searing — it leaches flavor into the liquid and the casings never brown properly. Keep the pan at medium-high, not high, or the casings will split before a crust forms. Skip hoppy IPAs, which turn bitter as the sauce reduces; a malty amber lager or dark beer works best. Leftovers reheat well, gently, in the sauce.
