Beer-Battered Fish Sandwich

Crispy beer-battered fish fillets piled on toasted buns with tartar sauce, lettuce, and pickles for the ultimate homemade fish sandwich.

  • 4 white fish fillets (cod or haddock, about 6 oz each)
  • 1 cup all-purpose flour, plus 1/2 cup for dredging
  • 1 teaspoon baking powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper
  • 1 cup cold beer (lager or pale ale)
  • 1 large egg
  • Vegetable oil, for frying
  • 4 brioche buns, toasted
  • 1 cup shredded lettuce
  • 1 large tomato, sliced
  • 1/2 cup dill pickle slices
  • 1/2 cup mayonnaise
  • 1 tablespoon capers, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard

Instructions

  1. In a small bowl, mix mayonnaise, capers, lemon juice, and Dijon mustard to make the tartar sauce. Refrigerate until ready to serve.
  2. Pat the fish fillets dry with paper towels and season lightly with salt.
  3. In a large bowl, whisk together 1 cup flour, baking powder, smoked paprika, garlic powder, 1 teaspoon salt, and black pepper.
  4. Whisk in the cold beer and egg until you have a smooth, slightly thick batter. Do not overmix.
  5. Heat about 2 inches of vegetable oil in a deep skillet or Dutch oven to 375°F (190°C).
  6. Dredge each fish fillet in the remaining 1/2 cup flour, shaking off excess, then dip into the beer batter, letting excess drip off.
  7. Carefully lower the battered fish into the hot oil and fry for 3-4 minutes per side, until golden brown and crispy.
  8. Transfer fried fish to a wire rack or paper towels to drain briefly.
  9. Spread tartar sauce on the toasted buns, then layer with lettuce, tomato, pickles, and the crispy fish fillet.
  10. Top with the other bun half and serve immediately while hot and crispy.

Notes

Keep the beer batter ice cold right up until frying for the crispiest crust. Use a neutral, mild beer like lager for the best flavor balance, and fry in small batches to keep the oil temperature steady.
