Super Delicious Zuppa Toscana

A soul-warming Italian soup featuring Italian sausage, bacon, potatoes, crushed red pepper flakes, chicken broth, and cream, similar to Olive Garden’s creamy Zuppa Toscana.

Ingredients

  • 1 pound Italian sausage
  • 6 slices bacon, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 6 thinly sliced potatoes
  • 1 cup heavy cream
  • 1/2 teaspoon crushed red pepper flakes
  • Salt and pepper to taste
  • Fresh spinach or kale (optional)

Instructions

  1. Cook bacon in a large pot over medium heat until crisp. Remove bacon and set aside, leaving drippings in the pot.
  2. Add Italian sausage to the pot and crumble with a spoon. Cook until browned.
  3. Add chopped onion and minced garlic to the sausage and cook until onion is translucent.
  4. Pour in chicken broth and bring to a boil.
  5. Add thinly sliced potatoes and cook until tender, about 15 minutes.
  6. Stir in heavy cream and crushed red pepper flakes. Simmer for 5 minutes.
  7. Season with salt and pepper to taste.
  8. Add cooked bacon back to the soup.
  9. Optional: Stir in fresh spinach or kale and cook until wilted.
  10. Serve hot.

Notes

For a richer flavor, use a mix of spicy and sweet Italian sausage. Adding fresh greens like kale or spinach at the end boosts nutrition and color. Adjust crushed red pepper flakes to your preferred spice level.
