Zesty Cranberry Orange Cookies with Sweet Citrus Glaze

For the Crust:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon orange zest
  • 2 tablespoons fresh orange juice
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup dried cranberries
  • 1 cup powdered sugar
  • 2 tablespoons fresh orange juice (for glaze)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg, orange zest, and orange juice.
  3. In a separate bowl, whisk flour, baking powder, and salt. Gradually add to the wet ingredients, mixing until combined. Fold in dried cranberries.
  4. Drop tablespoon-sized dough onto prepared baking sheets, spacing 2 inches apart. Bake for 10-12 minutes or until edges are lightly golden. Cool on wire racks.
  5. For the glaze, whisk powdered sugar and orange juice until smooth. Drizzle over cooled cookies and let set before serving.
