For the Crust:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tablespoon orange zest
- 2 tablespoons fresh orange juice
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup dried cranberries
- 1 cup powdered sugar
- 2 tablespoons fresh orange juice (for glaze)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg, orange zest, and orange juice.
- In a separate bowl, whisk flour, baking powder, and salt. Gradually add to the wet ingredients, mixing until combined. Fold in dried cranberries.
- Drop tablespoon-sized dough onto prepared baking sheets, spacing 2 inches apart. Bake for 10-12 minutes or until edges are lightly golden. Cool on wire racks.
- For the glaze, whisk powdered sugar and orange juice until smooth. Drizzle over cooled cookies and let set before serving.
