Winter Salad with Apples, Pecans, Blue Cheese & Dried Cherries

A refreshing winter salad featuring crisp Granny Smith apples, toasted pecans, tangy blue cheese, and tart dried cherries over spring mix greens, dressed with a maple apple cider vinaigrette.

Ingredients

  • 12 ounces Spring Mix greens or baby spinach
  • 2 Granny Smith apples, cored and sliced thinly
  • ½ cup pecan halves, toasted
  • ¼ cup dried cherries
  • 6 ounces Maytag blue cheese, cut into small cubes
  • 1 tablespoon Dijon mustard
  • 1 tablespoon real Maple syrup
  • 23 teaspoons apple cider vinegar (to taste)
  • ¼ cup olive oil
  • ¼ teaspoon salt
  • Freshly ground black pepper

Instructions

  1. Arrange apples, pecans, cherries, and blue cheese over greens in a salad bowl or on a platter.
  2. In a small mason jar, combine dressing ingredients (Dijon mustard, maple syrup, apple cider vinegar, olive oil, salt, and black pepper) and shake to mix and emulsify.
  3. Just before serving, pour dressing over the salad and lightly toss.

Notes

May use pears instead of apples, any favorite nuts, and dried cranberries instead of cherries. Toast pecans in the oven or skillet for extra flavor. Slice apples very thin with a mandoline for best texture.
