For the Crust:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 tbsp lemon zest
- 2 tbsp fresh lemon juice
- 2 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup white chocolate chips
- 1 cup fresh raspberries, halved
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg, vanilla, lemon zest, and lemon juice.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix dry ingredients into wet ingredients until just combined.
- Gently fold in white chocolate chips and raspberries, being careful not to crush the berries.
- Drop tablespoon-sized dough portions onto prepared baking sheets, spacing 2 inches apart.
- Bake for 10-12 minutes or until edges are lightly golden. Let cool on baking sheets for 5 minutes before transferring to wire racks.
