For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 8 oz cream cheese, softened
  • 1/2 cup white chocolate, melted
  • 1/4 cup powdered sugar
  • 1/2 cup blueberry preserves
  • Fresh blueberries for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. Cream butter and sugar until light and fluffy. Add eggs one at a time, then vanilla. Alternate adding flour mixture and milk, mixing until just combined.
  4. In another bowl, beat cream cheese, melted white chocolate, and powdered sugar until smooth.
  5. Fill cupcake liners halfway with batter. Add a spoonful of cream cheese mixture, then a teaspoon of blueberry preserves. Swirl gently with a toothpick.
  6. Bake for 20-25 minutes until set. Cool completely before garnishing with fresh blueberries.
