Veggie Cream Cheese Spread

A fresh, creamy garden veggie cream cheese spread perfect for bagels, crackers, or sandwiches.

  • 8 ounces softened cream cheese
  • 1 tablespoon milk
  • 2 tablespoons finely chopped carrots
  • 2 tablespoons finely chopped green bell pepper
  • 2 tablespoons finely chopped cucumber (drained)
  • 2 tablespoons finely chopped red bell pepper
  • Pinch of salt
  • Pinch of black pepper

Instructions

  1. In a large mixing bowl, combine softened cream cheese and milk. Use a hand mixer or spoon to stir until smooth.
  2. Stir in chopped carrots, green bell pepper, cucumber, and red bell pepper.
  3. Add a pinch of salt and black pepper, then mix until everything is evenly combined.
  4. If desired, transfer the mixture to a food processor or blender and pulse a few times for a finer texture.
  5. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
