For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 vanilla bean, seeds scraped
- 1/2 cup sour cream
- 1/4 cup heavy cream
- 1/4 cup granulated sugar (for topping)
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F. Line a muffin tin with cupcake liners.
- Mix graham cracker crumbs with melted butter. Press 1 tablespoon into each liner to form crusts.
- Beat cream cheese, sugar, and vanilla seeds until smooth. Add eggs one at a time, then mix in sour cream and heavy cream.
- Divide batter evenly among liners. Bake for 20-25 minutes until set but slightly jiggly in the center.
- Cool completely, then refrigerate for at least 4 hours.
- Before serving, sprinkle 1 teaspoon sugar over each cupcake. Caramelize with a kitchen torch until golden.
