Vanilla Bean Crème Brûlée Cheesecake Cupcakes

A decadent fusion of creamy cheesecake and rich crème brûlée in a delightful cupcake form.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 tbsp granulated sugar
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 vanilla bean, seeds scraped
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 1/4 cup granulated sugar (for topping)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Line a muffin tin with cupcake liners.
  2. Mix graham cracker crumbs, melted butter, and 2 tbsp sugar. Press 1 tbsp mixture into each liner to form crust.
  3. Beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then vanilla seeds, sour cream, and heavy cream.
  4. Divide batter evenly among liners. Bake for 20-25 minutes until set but slightly jiggly in center.
  5. Cool completely, then refrigerate for at least 4 hours.
  6. Before serving, sprinkle 1 tsp sugar on each cupcake and caramelize with a kitchen torch.
