For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • Gel food coloring (pink, blue, purple, yellow)
  • Whipped cream and sprinkles for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Mix graham cracker crumbs and melted butter, then press into a 9-inch springform pan to form the crust.
  2. In a large bowl, beat cream cheese and sugar until smooth. Add vanilla extract, eggs (one at a time), and sour cream, mixing well after each addition.
  3. Divide the batter into four bowls. Add a different gel food color to each bowl and mix until vibrant.
  4. Drop spoonfuls of each colored batter onto the crust, then use a knife to swirl gently for a marbled effect.
  5. Bake for 45-50 minutes or until the center is set. Let cool, then refrigerate for at least 4 hours.
  6. Garnish with whipped cream and sprinkles before serving.
