Triple Layer Strawberry Cake

A decadent and visually stunning triple layer strawberry cake with fresh strawberries and creamy frosting.

For the Crust:

  • 2 1/2 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup whole milk
  • 1 1/2 cups fresh strawberries, pureed
  • 1/2 cup strawberry jam
  • 3 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • Fresh strawberries for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and line three 8-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then vanilla.
  4. Alternately add flour mixture and milk to the butter mixture, beginning and ending with flour.
  5. Fold in strawberry puree. Divide batter evenly among the three pans and bake for 25-30 minutes.
  6. Let cakes cool completely. Whip heavy cream, powdered sugar, and vanilla until stiff peaks form.
  7. Assemble the cake by spreading strawberry jam between layers and frosting with whipped cream.
  8. Garnish with fresh strawberries before serving.
