For the Crust:
4 boneless, skinless chicken breasts
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon paprika
2 tablespoons olive oil
1 large onion, sliced
8 oz mushrooms, sliced
1 cup shredded cheddar cheese
1/2 cup heavy cream
1/4 cup chicken broth
Instructions
1. Prepare the Crust:
Season chicken breasts with salt, pepper, garlic powder, and paprika.
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-6 minutes per side until golden brown and cooked through. Remove chicken from skillet and set aside.
In the same skillet, add onions and mushrooms. Cook until softened, about 5 minutes.
Pour in chicken broth and heavy cream, stirring to combine. Simmer for 2-3 minutes until slightly thickened.
Return chicken to the skillet, spooning the mushroom and onion mixture over the top. Sprinkle with shredded cheddar cheese.
Cover and cook for 2-3 minutes until cheese is melted. Serve hot.
