For the Crust:
- 4 boneless, skinless chicken breasts
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tbsp olive oil
- 8 oz mushrooms, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/2 tsp dried thyme
- 1/2 cup shredded cheddar cheese
Instructions
1. Prepare the Crust:
- Season chicken breasts with salt, pepper, garlic powder, and onion powder.
- Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5-6 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, add mushrooms, onion, and garlic. Cook until softened, about 5 minutes.
- Add butter and flour, stirring to create a roux. Cook for 1-2 minutes until golden.
- Gradually whisk in chicken broth, heavy cream, and thyme. Simmer until thickened, about 3-4 minutes.
- Return chicken to the skillet, spooning gravy over the top. Sprinkle with cheddar cheese, cover, and let melt for 2 minutes before serving.
