Teriyaki Chicken Casserole

A delicious and easy-to-make casserole featuring tender chicken, vegetables, and a sweet and savory teriyaki sauce.

For the Crust:

  • 2 boneless, skinless chicken breasts, diced
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 red bell pepper, sliced
  • 1 cup cooked white rice
  • 1/2 cup teriyaki sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon minced garlic
  • 1 teaspoon grated ginger
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon black pepper
  • 1/4 cup sliced green onions (for garnish)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat vegetable oil over medium heat. Add diced chicken and cook until browned, about 5-7 minutes.
  3. Add broccoli, carrots, bell pepper, garlic, and ginger to the skillet. Cook for another 5 minutes until vegetables begin to soften.
  4. Stir in cooked rice, teriyaki sauce, soy sauce, honey, and black pepper. Mix well to combine.
  5. Transfer the mixture to a greased casserole dish and bake for 15-20 minutes, or until heated through.
  6. Garnish with sliced green onions before serving.

Notes

You can customize the seasonings to taste.
