For the Crust:
- 2 boneless, skinless chicken breasts, diced
- 1 cup broccoli florets
- 1 cup sliced carrots
- 1 red bell pepper, sliced
- 1 cup cooked white rice
- 1/2 cup teriyaki sauce
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 teaspoon minced garlic
- 1 teaspoon grated ginger
- 1 tablespoon vegetable oil
- 1/2 teaspoon black pepper
- 1/4 cup sliced green onions (for garnish)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- In a large skillet, heat vegetable oil over medium heat. Add diced chicken and cook until browned, about 5-7 minutes.
- Add broccoli, carrots, bell pepper, garlic, and ginger to the skillet. Cook for another 5 minutes until vegetables begin to soften.
- Stir in cooked rice, teriyaki sauce, soy sauce, honey, and black pepper. Mix well to combine.
- Transfer the mixture to a greased casserole dish and bake for 15-20 minutes, or until heated through.
- Garnish with sliced green onions before serving.
