For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 (8 oz) packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 tbsp lime zest
  • 1/4 cup fresh lime juice
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • Fresh lime slices for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs and melted butter, then press into mini tartlet pans.
  2. Bake crusts for 8 minutes, then let cool.
  3. Beat cream cheese, sugar, lime zest, lime juice, and vanilla until smooth.
  4. In a separate bowl, whip the heavy cream until stiff peaks form, then fold into the cream cheese mixture.
  5. Spoon filling into cooled crusts and refrigerate for at least 2 hours.
  6. Garnish with fresh lime slices before serving.
