For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 2 (8 oz) packages cream cheese, softened
- 1/2 cup granulated sugar
- 2 tbsp lime zest
- 1/4 cup fresh lime juice
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- Fresh lime slices for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs and melted butter, then press into mini tartlet pans.
- Bake crusts for 8 minutes, then let cool.
- Beat cream cheese, sugar, lime zest, lime juice, and vanilla until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form, then fold into the cream cheese mixture.
- Spoon filling into cooled crusts and refrigerate for at least 2 hours.
- Garnish with fresh lime slices before serving.
